With his renowned spirit of discovery, winemaker Stellios Boutaris explores unsung viti-vini stories of the Cyclades Islands and the local varieties of the Aegean Sea. Stellios’ touring unearths long-lasting roots and persistent artisanal vine growers that keep safeguarding the authenticity of their local produce. The new SIM label plumbs the depths of Assyrtiko, seeking the varietal expression on the small vine parcel cultivated by Arsenis Loukis, at the village of Marathi in Paros Island. The most promising 2022 vintage found its way to a mindful micro-vinification with 5-month lees ageing, creating a wine of vibrant acidity and mineral finish. ASSYRTIKO SIM 2022 is a limited release available exclusively at Warehouse 10.
